Minestrone
A hearty Italian vegetable soup
About Minestrone
Minestrone is a traditional Italian soup packed with seasonal vegetables, beans, and pasta. Its name means "big soup" in Italian, and it's a perfect comfort food that varies by region and season.
Ingredients
Aromatics
1 tbsp olive oil
2 tbsp chopped onion
1 clove minced garlic
2 tbsp diced carrot
1/4 cup tomato(chopped or canned)
2 tbsp diced celery
2 tbsp diced zucchini
a small handfull spinach or kale(optional)
Protein
1/4 cup cooked beans(cannellini or chickpeas)
2-3 tbsp small pasta(about dry)
1 tbsp chopped(pancetta)
Seasonings
¼–½ tsp (to taste) of salt
⅛ tsp black pepper
½ tsp Italian seasoning or (basil + oregano)
A pinch Crushed red pepper (optional)
1 leaf Bay leaf
1 tsp Fresh parsley (optional, chopped)
1 tbsp Parmesan (optional, for topping)
liquid
1 – 1½ cups (depending how thick you want it) of Vegetable or chicken broth
Instructions
Prep everything first — chop onion, carrot, celery, zucchini and tomato; mince garlic; measure pasta and beans. This keeps the cook flow smooth.
Heat the pot — place a small saucepan or small pot over medium heat. Add 1 tbsp olive oil and let it warm for ~30 seconds.
Sauté aromatics — add chopped onion, carrot and celery. Cook, stirring, for 3–4 minutes until the onion becomes translucent and the carrot softens slightly. If using pancetta, add it now and sauté until lightly browned (1–2 minutes) before the vegetables.
Add garlic & zucchini — stir in minced garlic and diced zucchini (if using). Cook 30–45 seconds until fragrant (don’t burn the garlic).
Tomato and seasonings — add the chopped tomato, ½ tsp Italian seasoning, bay leaf, a pinch of salt and the black pepper. Stir and cook 1 minute to marry flavors.
Add liquid & beans — pour in 1–1½ cups broth and add ¼ cup cooked beans. Bring everything to a gentle boil over medium-high heat.
Cook the pasta — once boiling, add your 2–3 tbsp dry pasta. Reduce heat to a simmer and cook according to the pasta package time (usually 6–10 minutes for small shapes). Stir occasionally so pasta doesn’t stick. If you prefer firmer pasta, remove 1–2 minutes before the package time.
Add greens at the end — with ~1 minute left on the pasta, stir in the small handful of spinach or kale so it wilts but stays bright.
Adjust seasoning — remove the bay leaf, taste the soup, and add more salt/pepper if needed. If broth reduced too much, add a splash of hot water or extra broth.
Serve — ladle into a bowl. Sprinkle with chopped parsley and 1 tbsp grated Parmesan if using. Drizzle a little olive oil if you like.
